Frosty Coconut Mojito

FROSTY COCONUT MOJITO😍

We all know we’re gonna need a few cocktails to get through this holiday season, and what better option than this ultra creamy, coconutty, minty, fresh mojito. Preferably made in a big batch (trust me, you’ll need multiple), around a tree, with fuzzy socks on, and your favorite Christmas movie. And if you close your eyes and let that sun coming in through your window or the heat from your fireplace hit your face just right, you MAY just feel like you’re on a real vacation. You’re gonna wanna make this ASAP!

 

Serves 1.

Ingredients:

For the Christmas Mojito:

  • 2 oz malibu coconut rum

  • 1 oz white rum

  • 1 oz cranberry juice

  • 1 oz canned Chaokoh coconut milk* (2 tbsps)

  • ½ oz lime juice

  • 1 tsp sugar

  • 6 mint leaves

  • Ginger beer for topping

  • Cranberries + more mint for topping

  • Ice

*Note:

  1. The brand of coconut milk does matter here. I find Chaokoh is the best, creamiest coconut milk for drinks and I don’t recommend swapping for another brand.

 

Directions:

For the Coconut Cranberry Mojito:

  • Add sugar, mint, and lime juice to the bottom of a cocktail shaker. Muddle with a muddler or wooden spoon for a few seconds to release the flavors of the mint.

  • Add the malibu, rum, cranberry juice, coconut milk, and ice to the cocktail shaker and shake continuously until cold.

  • Add ice to a glass and pour over the drink. Top with ginger beer, cranberries, and mint leaves and enjoy!
