COCTEL DE CAMARONES (Mexican Shrimp Cocktail)😍
I don’t know about y’all, but it’s still too damn hot in my kitchen to turn on the stove or oven! This no cook appetizer that doubles as a delicious meal prepped lunch has been on repeat ever since my godmother taught me how to make it. Super fresh, slightly spicy, and just perfect on top of your favorite crackers. You’re gonna love this!
Cóctel de Camarones is a Mexican Shrimp Cocktail LOADED with flavor thanks to fresh herbs, ketchup, and clamato. It’s the perfect balance of textures and flavors and you will love.
Serves 4-6.
Ingredients:
For the Cóctel de Camarones:
1 lb cooked small shrimp
½ cup ketchup
½ cup clamato
2 small Persian cucumbers, quartered
1 Roma tomato, cut into cubes
2 tbsps finely diced white onion
½ serrano, diced finely
2-3 tbsps chopped fresh cilantro
Juice from 2 limes
1 clove minced garlic
A few dashes of Maggi or Worcestershire sauce
Hot sauce to taste
1 avocado for topping
Salt to taste
Saltines or your favorite cracker for serving
Directions:
For the Cóctel de Camarones:
Add shrimp, cucumbers, tomato, onion, serrano, and cilantro to a bowl.
Add in the ketchup, clamato, lime juice, Maggi or Worcestershire , garlic, and hot sauce and mix until well combined. Refrigerate for at least 30 minutes to let the flavors develop.
Serve with crackers and top with avocado (I like to keep the avocado separate so it doesn’t brown). Enjoy!
