Southwestern Chicken Salad
SOUTHWESTERN CHICKEN SALAD😍
One of the best things I can do for myself at the start of the week is prepping some salad toppings for easy, not boring, and filling salads throughout the week and this has become my new fav! Keep it as a salad or throw it in a wrap, with a 2 second salad dressing you are going to LOVE! You’ve gotta try this!
Serves 2.
Ingredients:
For the Southwestern Chicken Salad:
2 cups spring lettuce
1 cup shredded rotisserie chicken
¼ cup drained and rinsed black beans
¼ cup corn
1 avocado, sliced
½ cup cherry tomatoes
Chopped fresh cilantro
Salt to taste
For the Chipotle Salad Dressing*:
3 tbsps Chipotle Bitchin sauce
Juice from 1 small lime
*Note: if you don’t have bitchin sauce, you can use a similar chipotle dressing like the one here, or blend some avocado, cilantro, lime juice, jalapeno, and olive oil for a creamy cilantro dressing
Directions:
For the Southwestern Chicken Salad:
Divide the ingredients among two separate bowls. Salt your greens!
Mix together the Bitchin sauce with the lime juice. Taste and adjust for seasoning.
Drizzle the chipotle dressing over your salad, toss and enjoy!
