HEALTHIER SLOPPY JOE’S😍

Double/triple/quadruple this recipe because you WILL eat the leftovers you were supposed to save for your lunch tomorrow, and you MAY eat more for breakfast the next morning because this is THAT GOOD. Seriously, a dinner that takes like 5 minutes to make probably shouldn’t taste this good but it does. You’re gonna need to make this ASAP😋

 

Makes 2-4 servings.

Ingredients:

  • 1 lb ground beef

  • 2 large sweet potatoes

  • ¼ cup compliant ketchup (I like Tessa Maes)

  • ¼ cup coconut aminos

  • 2 tbsps yellow mustard

  • ¼ cup tomato paste

  • 2 tbsps balsamic vinegar (only if your ketchup doesn’t have this as an ingredient)

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Pinch of salt

 

Directions:

  • Wash your sweet potatoes and prick all over with a fork.

  • Either bake at 425 for 45-50 minutes or microwave for 5 minutes.

  • Get a skillet nice and hot and spray with avocado oil or other.

  • Brown the beef, breaking up into small pieces with a wooden spoon

  • Season with salt, garlic powder, chili powder, and onion powder and cook until browned, about 3-4 minutes.

  • Drain most of the grease and add in ketchup, mustard, tomato paste, coconut aminos, and balsamic vinegar (if using). Reduce heat to low and cook for 2-3 more minutes until just thickened.

  • Cut your sweet potatoes in half and season with a bit of salt and pepper

  • Serve the meat on top the cut sweet potato and enjoy!
