Five Spice Pork Tenderloin with Grilled Bok Choy

FIVE SPICE PORK TENDERLOIN WITH GRILLED BABY BOK CHOY 😍

My bank account has been taking a major hit with all the trips I’ve been taking lately, so I’ve been paying extra attention to what’s on sale at my grocery store. This recipe came about by what was on sale at my local Ranch 99 - the whole pork loin was only $2 (!!) [even not on sale it was only $4] and I got a pound of baby Bok Choy for 89 cents… AND I had enough to take to lunch next day. Seriously, this recipe is so flavorful - it legit tastes like a 5 star meal, when in reality you’ll pay less than a McDonald’s McDouble 🤤 you’re gonna wanna make this ASAP

Ingredients:

For the Pork Tenderloin:

  • 1 lb pork tenderloin

  • 1 tsp Chinese five spice powder (mine has fennel, cinnamon, star anise, coriander, and Szechuan peppercorns)

  • 1 tsp salt

  • 1 tsp pepper

For the Hoisin Sauce:

  • 2 tbsps hoisin sauce

  • 2 tbsps soy sauce

  • 1 garlic clove minced

  • 1 tbsp finely chopped fresh ginger

For the Bok Choy:

  • ½ lb baby bok choy

  • 2 tsps sesame oil

  • ½ cup chicken broth

  • 2 tbsps oyster sauce

  • 1 minced garlic clove

  • 1 tbsp minced fresh ginger

  • 1 tsp cornstarch

Directions:

For the Pork Tenderloin:

  • Preheat your oven to 400 degrees.

  • Season your pork tenderloin all over with five spice powder, salt and pepper.

  • Get a cast iron skillet nice and hot and add in some avocado oil.

  • Sear your pork on all sides until you develop a nice crust.

  • Bake for 10 minutes.

  • Make your sauce by mixing together the hoisin sauce, soy sauce, garlic and ginger.

  • Brush your pork all over with the sauce and bake for 3-5 more minutes until pork reaches 140 internal temperature.

  • Let rest on a cutting board for 5 minutes before cutting into thick medallions.

For the Grilled Baby Bok Choy:

  • Slice 4-6 baby Bok Choy lengthwise and brush with half your sesame oil.

  • Grill 3-5 minutes per side in a cast iron grill pan.

  • Make your sauce by mixing together chicken broth, oyster sauce, garlic, ginger, sesame oil and cornstarch.

  • Add to a saucepan and simmer until thick.

  • Serve the Bok Choy with some sauce drizzled on top and thank me later 😋😋
