Ingredients:
For the Chicken Satay Noodle Bowl:
2-3 cups rotisserie chicken
8oz noodles (I used brown rice Pad Thai noodles to make this gluten-free, but you can use any noodles)
2 cups shredded carrots
2 cups shredded cucumber
½ cup peanut butter
1/4 - ½ cup coconut beverage (not the coconut milk from a can)
Juice from 1 lime
2 tbsps hoisin sauce
2 tbsps soy sauce
2 tbsps fish sauce (optional)
1-2 tbsps sriracha
Peanuts, cilantro, and lime wedges for serving
Directions:
For the Chicken Satay Noodle Bowl:
Start by bringing a pot of water up to boil. Add your noodles and cook to package instructions.
In a large bowl, combine the peanut butter, coconut milk, lime juice, hoisin sauce, soy sauce, fish sauce, and sriracha. Add water until the sauce resembles a consistency a bit thinner than pancake batter.
Add the shredded chicken, carrots, cucumbers and cooked noodles and stir to combine. Serve at room temperature and enjoy!đ
